Ingredients

  • 1-1/2 cups Kodiak Cakes Buttermilk Power Cakes Mix
  • 3/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 large zucchini, shredded
  • 2 very ripe bananas, mashed
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, add mashed banana, shredded zucchini, almond milk., vegetable oil, vanilla, and egg.
  3. Mix until combined.
  4. Add brown sugar and mix again.
  5. In a separate bowl, combine flour, salt, and baking powder.
  6. Add dry ingredients to wet ingredients, mixing after each addition. If the batter is too dry, add more almond milk.
  7. Fill muffin liners ¾ full with batter and bake for 12-15 minute or until toothpick comes clean.
  8. Let cool and enjoy!
