Buttermilk Flapjack with Fried Chicken

On a slow Saturday morning, dust off that apron and create a flavor-packed breakfast: Buttermilk Chicken and Waffles. This recipe is one for the ages folks, as the drop-dead delicious savory chicken combined with the hearty whole grain waffles makes each bite taste like heaven on earth. And unless you go for thirds and fourths, you’ll be ready to take on the day, satisfied.

Ingredients

For the chicken:

  • 4-3 oz. chicken breast 
  • 1/2 am tablespoon salt
  • 1 cup buttermilk
  • 1 tablespoon frank’s hot sauce
  • 1-1/2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1 teaspoon am salt
  • Cracked black pepper
  • 5 cups frying oil

 

For the flapjacks:

  • 1 bag Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 4 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup butter, melted
  • 3 eggs
  • Non-stick spray
  • Butter for skillet cooking

Directions

For the chicken:

  1. Clean and trim chicken breasts.
  2. In a large mixing bowl, combine buttermilk, hot sauce, and salt. Mix well, then add chicken to marinate for 1 hour in the refrigerator.
  3. While marinating, prepare a shallow dish with flapjack mix, sea salt, and freshly cracked black pepper. Whisk together and set aside.
  4. Preheat oil in a large Dutch oven-style pot or cast-iron skillet to 350 degrees Fahrenheit. 
  5. Bread chicken by dredging breasts in flapjack mixture, then buttermilk, then flapjack mixture. 
  6. Place chicken in the fryer for 4-5 minutes per side, flip, and fry until golden brown. About 12 minutes max. Cool on a wire rack until serving.

 

For the flapjacks:

  1. In a medium-sized bowl, combine flapjack mix, milk, cream, and melted butter. Whisk to combine thoroughly. 
  2. Prepare a large skillet over medium heat.
  3. Pour 1/2 cup of batter into the pan to create a large flapjack. Wait until it bubbles and is golden on one side before flipping. Then flip and continue to cook for another minute. Repeat until all the batter is used. Serve immediately with fried chicken and maple syrup.
