Whether you’re spending your evening amongst the stars by a crackling campfire or cozied up in your home, bring the nature to your cookin’ with this mixed berry cobbler recipe. Cobbler is one of our favorite treats—from the flaky, buttery crust to the tart, fresh berries bubbling on the inside, the whole dang thing is delicious! Take it over the top with a heap of whipped cream or ice cream.

Ingredients

Blueberry Biscuit Topping

  • 2/3 cup cold butter, cubed
  • 1 teaspoon fresh lemon zest
  • 1/2 cup Buttermilk
  • 1-1/2 cup Kodiak Blueberry Power Cakes Flapjack & Waffle Mix 

 

Mixed Berry Filling

  • 1-1/2 cup Blueberries
  • 2 cups fresh Strawberries
  • 1 cup raspberries
  • 1/3 cup maple syrup or honey or Granulated sugar
  • 1 teaspoon Vanilla (optional)
  • 1 teaspoon Lemon zest
  • Pinch of salt

Directions

Blueberry Biscuit Topping

  1. In a medium bowl add cold butter and lemon zest to Kodiak Blueberry Power Cakes. 
  2. Use your fingers to massage the cold butter and lemon zest into the dry mix until the butter pieces are pea sized. 
  3. Drizzle buttermilk over top and use a spatula or a spoon to gently fold the buttermilk into the mix until just incorporated.

 

Mixed Berry Filling

  1. In a large bowl, mix together berries, sugar, lemon zest, and vanilla until combined. 

 

Campfire Baking Instructions

  1. Build a campfire and set a grill over top. 
  2. Prepare filling and topping according to instructions above. 
  3. Butter a 10-inch cast iron skillet. Pour prepared filling into the buttered skillet and top with biscuit topping. Brush the top with melted butter and sprinkle with sugar. 
  4. Cover the skillet with a lid or tin foil. Keep a small to medium flame rolling while the cobbler cooks. Place skillet over a campfire grill and allow to cook until filling is bubbling and biscuits are cooked all the way through. 

 

Oven Baking Instructions

  1. Pre-heat oven to 375F. Butter a 10-inch cast iron skillet. Prepare filling and topping according to instructions above. 
  2. Pour prepared filling into the buttered skillet and top with biscuit topping. Brush the top with melted butter and sprinkle with sugar. Bake for 35-40 minutes or until the topping is light golden brown and the filling is bubbling at the edges. 
  3. Serve warm with whipped cream or vanilla ice cream. Enjoy!
