The perfect pie crust shouldn’t be once in a lifetime. So, we've unwrapped a simple and delicious solution that packs a whole lotta good stuff — like whole grains and protein — into a holiday classic. Our pie crust recipe features Kodiak Buttermilk Power Cakes, a touch of unsalted butter, and a sprinkle of water. The result? A pie crust so flaky and flavorful, it'll have your whole family coming back for seconds (and probably sneaking thirds, too). But, the real holiday miracle is that you'll be feasting on this homemade pie in just 32 minutes.

Ingredients

  • 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1 cup cold, unsalted butter
  • ~8 tablespoons ice water

Directions

  1. Preheat oven to 375° F.
  2. Put Kodiak mix in a large bowl and cut cold butter into small pieces.
  3. Cut butter into the mix using a pastry cutter or two butter knives until butter is the size of peas.
  4. Make a well in the center of the mix and add cold water by tablespoons. Combine just until the dough sticks together and forms a ball. Then, divide the dough in half.
  5. On a floured surface*, roll one half of the dough into a large circle. Place in pie tin and crimp the edges with your fingers.
  6. For a second pie, repeat with other half of dough, refrigerate, or freeze to save for another time or another use.
  7. Bake filled or unfilled for 10-12 minutes.

*Roll dough out onto a floured piece of parchment to make it easier to transport into pie tin.

 

Pro Tip: If baking the crust without a filling, line with foil and put pie weights or uncooked rice on foil. This is called blind baking, and it will keep your crust from shrinking as it cooks.
