Ingredients

Pretzel Bites:

  • 1-1/2 cups warm water
  • 1 tablespoon honey
  • 2-1/4 teaspoons active dry yeast
  • 4 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix 
  • 1 teaspoon salt
  • 1 tablespoon butter, melted
  • 1 egg, beaten 
  • Coarse salt, to top 
  • 1/4 cup baking soda

 

Cheese Sauce:

  • 3 tablespoons butter 
  • 2 tablespoons Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix 
  • 3/4 cup shredded cheddar cheese
  • 1/2 teaspoon mustard 
  • 1-1/4 cups whole milk
  • Salt, to taste 

Directions

Pretzel Bites:

  1. Add the warm water, honey, and yeast to a small bowl and stir to combine. Let sit for 5 minutes or until yeast is bubbly.
  2. Add the Kodiak mix, salt, and butter to the bowl of a stand mixer along with the yeast mixture. Stir with a dough hook until a dough comes together. Let sit for 3 minutes. Add additional power cakes mix, if needed, until dough is not sticky.
  3. Beat the dough for 5 minutes on medium speed (alternatively, knead with your hands).
  4. Coat the inside of a bowl with olive oil. Add the dough and cover with a cloth. Let rise for 40 minutes, or until doubled in size.
  5. One the dough has risen, bring a pot with 6 cups water to a boil. Preheat the oven to 425 degrees Fahrenheit.
  6. Roll the dough into ropes that are 1” in diameter. Cut into 1” pieces.
  7. Add the baking soda to the boiling water. Working with about 8 dough pieces at a time, lower them into the water with a slotted spoon and cook just until they float to the surface.
  8. Place the boiled dough pieces 1 inch apart on a parchment lined baking tray.
  9. Once all of the dough pieces have been boiled, brush them with the beaten egg yolk and sprinkle with coarse salt.
  10. Bake in the preheated oven for 12-15 minutes, or until golden brown. 
  11. Serve warm with cheese sauce.

 

Cheese Sauce:

  1. Melt the butter in a saucepan. Add the power cakes mix and whisk for 30 seconds on medium high heat.
  2. Add ½ of the milk and whisk in. Continue whisking until thickened.
  3. Add the cheese and mustard and whisk until cheese is melted in and smooth.
  4. Add the remaining milk and bring to a boil, whisking constantly until mixture is thickened and smooth.
  5. Remove from heat. Add in salt to taste.
  6. Serve alongside pretzel bites.
